All the cream and carbs pretty much make strawberry shortcake an unhealthy dessert. But with all the fresh berries, I like to pretend otherwise.
And so easy to make. This time of year, my local coop, The Merc, has shortcakes ready to go right by the cartons of fresh organic strawberries. When they don’t have them, I make my own quick and easy shortcakes using Bisquick. The recipe is on the package. Add your own sweetened, vanilla whipped cream and diced, macerated strawberries, and you’ve got my favorite summer dessert.
- 1 quart strawberries
- 1 T sugar
- 1 C heavy whipping cream
- 3 T powdered sugar
- 2 t vanilla extract
- 4 shortcakes
1. Dice strawberries into bite size chunks. Sprinkle sugar over strawberries, stir, and allow to sit.
2. Place bowl of Kitchenaid mixer in freezer. Chill. Whip heavy whipping cream with sugar and vanilla extract until firm.
3. Serve shortcakes with strawberries and whipped cream. Enjoy!
