My new favorite drink to sip on springtime afternoons? Boozy lavender lemonade.
The week before Easter, I bought a bag of lemons at Target for $5. I have always meant to experiment with lavender flavored cocktails, because it’s my favorite scent and I assumed I’d be into the flavor.
So, when life gave me lemons, I made lavender lemonade.
Nothing says spring like fresh-squeezed lemonade. Sweetening it with lavender simple syrup makes it all the more special. Add some vodka or gin and you’ve got boozy lavender lemonade.
It was the perfect Easter cocktail. It would also be a great addition to a bridal shower menu. You could even leave out the vodka or gin, if that’s more your style. It’s delicious either way.
Lavender Simple Syrup
Boil one cup of water with one cup of sugar and three tablespoons of dried lavender. Let it steep as it cools for 45 minutes. Store in an airtight container. It will last two weeks in the fridge.
- Juice of 2 lemons
- 2 T lavender simple syrup
- 2 oz gin or vodka
- club soda
- 2 C fresh-squeezed lemon juice
- 1 C lavender simple syrup
- 1 C gin
- club soda
For single serving, combine lemon juice, lavender simple syrup, and gin in cocktail shaker, shake with ice, and strain into highball glass. Top with club soda.
For pitcher, combine lemon juice, simple syrup, and gin. Stir until combined. Refrigerate. When ready to serve, fill highball glass 3/4 full over ice, then top with club soda.
