Sparkling Pomegranate Margaritas

My mom is a vodka drinker. I’m a fan of gin. Where we can agree? Tequila. Which is how I came up with these sparkling pomegranate margaritas for a poolside weekend with my family.

My brother and sister-in-law have a great friend with a house on the PGA West golf course in La Quinta, just a bit farther south than Palm Springs. My mom was going stir crazy waiting to hear from her doctors about the treatment options for her cancer, so my brother flew her out for a long weekend in California so we’d get to see her and she could try and relax.

I knew we’d have a lazy weekend reading by the pool and sipping on cocktails, so I wanted something quick and easy to mix up in batches as well as a drink that was light and refreshing that would satisfy both my palette and my mother’s (Marsh + Whit are not picky at all). My mom’s go-to drink after a vodka tonic is a pomegranate cosmopolitan, so I knew the pomegranate would work.

I’d seen a sparkling margarita on a restaurant menu and was intrigued by the idea, and of course a dose of bubbles makes a very tart, strong drink like a margarita more light and refreshing.

Which is how we ended up with sparkling pomegranate margaritas.

And wow, were they good! These are a new favorite. And to be honest, we ran out of pomegranate juice after the first batch, and just did sparkling regular margaritas, and they were good.

Seriously, this was the perfect poolside drink.

sparkling pom margaritas

My new philosophy in life is when in doubt,  just “add sparkling wine.”

Slip into the pool with your favorite paperback novel and relax. You’ve earned it.

Do you have a favorite poolside cocktail? I’d love to hear about it so I can try it on my next trip to La Quinta!

  • YUMMY!

  • Oh yum! This seems like it would be lovely for a winter holiday, it’s such a festive color and I think pomegranates are winter fruits.. ? maybe. I dunno! Anyhow, pinning for later! I love tequila and margaritas as well. Being #thepalestofpale I can’t really do the beach/poolside thing very well… so I’ve never had a chance to find my drink of choice. HA I love a margarita, tasty sangria, or Pimm’s Cup anytime though! 🙂 XO – Alexandra

    • Pomegranates are a winter fruit, like citrus, but since you can get Pom juice anytime I it worked for our summer trip. But we do have a Mexican themed Christmas Eve dinner every year – it’s a tradition – so this will probably make it on the list. We’ll also be at La Quinta for Christmas this year, so I’m sure that will be a new tradition as well. I a very, very pale girl too, and the key is lots of sunscreen and a big floppy hat!
