I love berries. And pizza.
So of course, putting the two together is pretty much my favorite thing ever.
Technically, this is a “brunch” recipe of my mom’s. In fact, it would perfectly complement some frittatas for a Galentine’s Day brunch.
The berry pizza would still be a perfect, show-stopping dessert for special occasions. It’s easy to make, but has 4 distinct steps so is a little time-consuming. Luckily, it can easily be made the day before an event.
First, you make a butter pecan cookie-like crust.
Then you add a cream cheese mixture.
This delicious berry sauce is my favorite part, and is perfect for layering between chocolate cakes, too. Or drizzling over ice cream. Or eating with a spoon.
It’s basically blended frozen berries and sugar. Yum.
After the berry sauce, you add another layer of fresh berries. Blueberries, strawberries, and raspberries. See all that fruit! I’m so lucky that in California, you can get beautiful, locally grown berries year round.
Very Berry Pizza
- 1 cup all purpose flour
- 1/4 cup powdered sugar
- 1/2 cup cold butter
- 1/2 cup chopped pecans
Cream Cheese Custard:
- 8 oz cream cheese, softened
- 1 egg
- 1/3 cup sugar
- 1 3/4 cups frozen mixed berries
- 1/2 cup sugar
- 2 tablespoons cornstarch
- 1/4 cup water
- 2 cups strawberries
- 2 cups raspberries
- 1 cup blueberries
In a bowl, combine flour and sugar. Cut in butter until the consistency of crumbs. Stir in pecans. Press into ungreased pan. Bake at 350F for 12-14 minutes until lightly browned on edges.
Beat cream cheese, egg, and sugar until smooth. Spread over crust. Bake an additional 8 minutes. Cool to room temperature.
Meanwhile, process frozen berries and sugars until smooth. Combine water and cornstarch in pan on medium high heat. Add berries. Bring to a boil. Cook two minutes until thickened. Remove from heat and set saucepan in cold water for 15 minutes to cool. Stir occasionally.
Add berry sauce to cream cheese, top with sliced fresh strawberries, raspberries, and blueberries. Refrigerate for at least 2 hours before serving.
