Each week, I share my vegetarian weekly meal plan, full of vegan and vegetarian recipes to cook at home, with the goal of reducing food waste and enjoying quick, easy, healthy, and tasty meals.
Last week, we did great at sticking to our plan, at least in terms of having no food waste. Even though I was sick a few days and Mister BS made a great broth-y soup for me instead of a couple of the meals we’d planned. We only ate out once on Friday night (Corazón Cocina tacos, surprise) and a slice of pizza on the way home from a baby shower (where the main dish was ribs, so we were hungry after the party).
Vegetarian Weekly Meal Plan: Avocado, Kale, Feta, Cauliflower
The big indulgence this week is a kale pesto risotto, but I’m planning on switching out the nuts and adding basil to this recipe. I’ve done several risottos on the stovetop, but the idea of just throwing it into the oven is very appealing, so I am anxious to see how it turns out.
We had cauliflower kale nachos (recipe up this week!) instead of the cauliflower lentil tacos last week, so they are getting carried over to this menu.
We still have a couple avocados that didn’t ripen up this week, so we’re carrying over the feta fiesta kale salad, and I’m sure we’ll do some other “finish up these leftover veggies” salads with some gorgeous romaine lettuce we picked up at the farmer’s market.
Mister BS spent an afternoon with the America’s Test Kitchen vegetarian cookbook, so our new recipes to try are from there: a roasted cauliflower soup, cauliflower cakes, veggie and bean tostadas (a variation on one of our easy go-to weeknight meals) and a veggie curry. We’ll see how many we get through.
If you’re counting, that’s four meals that feature cauliflower. I think it’s safe to say we’re obsessed.
There have been beautiful fresh artichokes at the farmer’s market, so next week I want to plan to get some of those and cook them. I’ve never done it before but it seems like it’d be fun to try!
If we eat out next week, I want to try Goa Tacos instead of Corazón (as much as we love it). It looks like Goa has lots of veggie options!
